Leg Shank: Ideal family roast. Very lean and tasty. For 4 people.
Leg Fillet: The Shank and the Fillet make up the whole leg. This is the thicker bit at the top.

If you would like us to use Lamb Casings (narrower sausage) for religious or cultural reasons, please let us know. We process all beef and lamb sausages, before we process the pork.
