Loin Chops: These are the sirloin and fillet on the bone. Lamb T bones in effect.

French Trimmed Cutlets: Cutlets, french trimmed with the backbone removed. Easy to pick up & eat with your fingers!

Leg Steaks: Bone out Ideal fried, grilled, or cut for stir fries or curries. Very versatile.

Noisettes: Boned out and trimmed cutlets individually tied. Beautifully prepared. A lovely light meal.

Short Saddle: A pair of boned out loins. Prepared as a roast ready for the oven.

Rolled Shoulder: We trim out a lot of the excess fat. Very flavoursome.

Leg Shank: Ideal family roast. Very lean and tasty. For 4 people.

Leg Fillet: The Shank and the Fillet make up the whole leg. This is the thicker bit at the top.

Lamb Mince: Minced trimmed shoulder.

Lamb Sausage: Approx. 10 sausages per pack. Romany - A selection of herbs. Merguez - A Spanish sausage with cumin and cinnamon. Very moorish, literally!

If you would like us to use Lamb Casings (narrower sausage) for religious or cultural reasons, please let us know. We process all beef and lamb sausages, before we process the pork.
